Mockingbird – Apple Saison
Mockingbird, Apple Saison. Brewed with with local malted Southern Select, Pilsner, and Appalachian Wheat from Asheville’s Riverbend Malt House, fermented with our house mixed saison and wild yeasts. On secondary fermentation we added fresh pressed cider from 6 selected varietals of locally grown heirloom apples from Freeman Orchards. Winesap, Stayman Winesap, Snap Stayman, Golden Russet and Genesis Winesap. Cider was pressed in collaboration with our friends Dan and Katie from Barn Door Ciderworks.
Beautiful subtle apple aroma. Crisp cidery mouth feel and taste with a wheat beer signature. A humble marriage of styles, a beer that wants to mock a cider, but yet remains a farmhouse ale. Mellow tartness from the wild yeast, finishes dry and clean. Super refreshing drink
